Bacon Cornbread

Overview :
This bread recipe is combination of white cornmeal, buttermilk and cornbread, and put a piece of bacon or crisco in top of it, more tasty and delicious. good as a warmed bake snack.
Ingredient :
2 c stone ground white cornmeal
1 ts Baking soda
2 Large eggs
1 ts Salt
2 c Buttermilk
1/3 c Bacon drippings or Crisco
How To …
Before started, preheat the oven first to 450 F. Take bacon drippings or Crisco and arrange it in nine-inch cast iron skillet. Put skillet in hot oven until fat is boil, lets put a side the butter thing for the minute (it should take not more than 5-10 minutes) then mix cornmeal, salt and baking soda, altogether in medium size bowl. Add buttermilk and eggs together. Blend it thoroughly using wire whisk. Next is pour all batter gently, except one tablespoon of hot fat into batter, beat it quickly with whisk to incorporate fat. Then turn skillet around to coat and bottom sides thoroughly with remaining fat. Pour batter into skillet. Then bake it on top rack of the oven for about 25-30 minutes, or until the top of cornbread is firm. After that turn cornbread onto plate and slip back into skillet upside-down. Return it to the oven for next 5 minutes. Finally turn out onto rack, cut it into 6 wedges and serve immediately.
