Corn Muffins

Ingredient :
1/3 c Yellow cornmeal
1 Large beaten egg
1/3 c Unbleached flour
2 tb Sugar
1/4 c Milk
1/4 ts Salt
1 1/2 ts Baking powder Yellow corn meal
4 ts Cooking oil
How To …
In a small bowl, sift together flour, 1/3 c of yellow cornmeal, sugar, baking powder and salt. Make a well in center of dry ingredients. Combine beaten eggs, milk and cooking oil. Add all at once to dry ingredients, stirring just until moistened. Line 6 oz four cups custard cups of baking paper. Fill 2/3rds full. Sprinkle a little corn flour additional top of the muffin. Micro-cook, uncovered, on 100% power about 1,5 minutes or until done, rearranging twice. Once done, but the wet surface may appear wooden pick inserted near the center should come out clean. This bread recipes could serve two people.
