Irish Whiskey Bread

Ingredient :
For Bread
1/2 c Honey, liquid
1/4 c Irish whiskey or buttermilk
4 c Flour, all purpose
1 ts Salt
For Glaze
1 ts Baking soda
1/4 c Butter, chilled
2 ts Irish whiskey
1 c Raisins or currants, optional
How To …
For Bread :
In a large bowl, combine flour, salt and baking soda. Pastry with a blender or two knives, cut the butter until the mixture resembles coarse crumbs. Stir in raisins or currants (if using). In another bowl, combine the buttermilk, honey and whiskey. Add all at once to dry ingredients, stir until no dry spots remain. Turn the dough out onto lightly floured surface. Knead 1 minute minor (too many handling will harden breads, while too little will curb the rise.) Divide dough in half and shape each half into 8-in (20 cm) round. Roll into two greased 8 and (1.2 L) round cake pans. With floured knife, cut a cross 1/2 deep into each bread. This bread recipes could serve eight people.
For Glaze :
In a small bowl, combine the whiskey and milk. Brush bread with glaze. Bake at 350F (180C) for 35 to 40 minutes or until bread sounds hollow when operated on the merits. Remove from pans, cool on wire rack. Cut into wedges.
