“Meaters” Muffins

Overview :
Who don’t like bacon? even serves as it original, bacon is delicious, there for this “full protein” muffin recipe is a great meal for “meaters”. Plus an additional onion for keep the taste more powerful as a main dish altered as an easy meal. But it is not suggested for vegetarian.
Ingredient :
1/2 lb Bacon, Diced
1/4 c Chopped Onion
1/2 ts Salt
2 1/4 c Unbleached Flour, Sifted
3 ts Baking Powder
2 Large Eggs, Slightly Beaten
1/2 ts Baking Soda
1/3 c Milk
1 c Dairy Sour Cream
Extra Sesame Seeds
How to :
First thing to do is, fry the bacon until it crisp in regular skillet. Then remove it with slotted spoon, put the bacon on paper towels or drain. Next is, take a slice of margarine then saute the onion in 1 T bacon drippings until tender, do not wait until it brown. Then put the bacon aside and let it cool. Then for the batter, mix together flour, baking soda, salt and baking powder in large bowl. Then beat the eggs and pour the milk and sour cream in small bowl, blend it well. Then add all at once to dry ingredients, stirring softly until it moisten. Then add bacon and sauteed onion together, keep stir them. Use a spoon to take batter into greased 2 1/2-inch muffin-pan cups, fill 2/3rds full. Sprinkle with sesame seeds as you like. The put it in 375 degree F oven for about 20 minutes or until it brown shinny. Add jam or jelly when served it hot. It could fulfill 6 person. Enjoy!
