Nutty Toasted Muffins

Ingredient :
1/2 c Unbleached flour
1/4 c Quick-cooking rolled oats
1/4 c Broken walnuts, toasted
2 tb Milk
2 tb Raisins
2 tb Sugar
1 ts Brown sugar
1/2 ts Baking powder
1 ts Butter or margarine
2 tb Cooking oil
1 Large beaten egg yolk

How To …
Combine the oats and 2 T hot water, let stand for 5 minutes. Meanwhile mix 1 / 2 cup flour, sugar, baking powder, cinnamon and salt. Stir in egg yolk, oil and milk mixture of oats, add to dry ingredients, stirring just until moistened. Fold in 3 T of the nuts and raisins. Line 6-cup custard four ounces of paper cups cooking. Fill 2/3rds full. Combine 2 tons of flour, sugar, butter, and the rest of the nuts. Sprinkle on top of muffins. Micro-cook, uncovered, on 100% power for 1 1 / 2 to 2 1 / 2 minutes or until done, rearranging twice. (Once this is done, surface water may still appear moist but a wooden pick inserted near the center should come out clean.) Remove the custard cups. Let stand on a wire rack for 5 minutes. Serve hot. This bread recipes could serve a couple.
