Rhubarb Pecan Muffins

Ingredient :
2 c Flour
1 1/4 c Rhubarb, fresh fine chopped
3/4 c Chopped pecans
1 Egg, large
1/4 c Vegetable oil
3/4 c Sugar
2 ts Grated orange peel
1 1/2 ts Baking powder
3/4 c Orange juice
1/2 ts Baking soda
1 ts Salt
How To …
Combine all dry ingredients. Beat the egg and oil, add the orange juice. Add to flour mixture. Add rhubarb. Bake 25-30 minutes at 350F. This bread recipes could serve twelve people.
